    Banana-Lupine Curry (vegan, vegetarian, gluten-free)

    Lupine provides valuable alkaline protein, which athletes like to use in protein shakes or in baked goods to reduce carbohydrates and increase the protein content. Also to be mentioned is the high biological value of the sweet lupine, which supplies all the essential amino acids we humans need.

    Especially for allergy sufferers with a gluten intolerance, the Lupine offer a delicious alternative to wheat and Co., as it contains no gluten and does not contain any cholesterol.

    Banana-Lupin Curry

    Zutaten

    • 340g sweet lupine, glass (drained net weight 190g)
    • 50g spinach leaves
    • red pepper powder
    • 1 plantain
    • 50ml coconut milk
    • 200g chopped tomatoes, can
    • 1 tablespoon korma paste
    • 2 teaspoons ghee
    • 10g ginger
    • 1 red onion
    • 2 garlic cloves
    • salt, black pepper

    Zubereitung

    Schritt 1 Drain liquid from sweet lupines. Peel and mince garlic. Peel onion, cut in half and slice into thin rings. Finely grate ginger. Heat 1 tsp ghee in a pot. Fry garlic and onion in it for 5 minutes. Add ginger and korma paste and fry for another minute.
    Schritt 2 Add chopped tomatoes and deglaze with 150ml water and coconut milk.
    Bring to a boil briefly and then let it simmer on low heat for 15 minutes.
    Meanwhile, peel the plantain with a knife and cut into thin slices.
    Schritt 3 Heat the remaining ghee in a skillet and fry the banana slices until golden brown. Drain on paper towel and sprinkle with salt and paprika powder.
    1 minute before the end of cooking, stir spinach leaves into the curry and season with salt and pepper. Serve curry with banana slices and enjoy!
