
Lentils salad with wild garlic pesto

Wild garlic is rich in vitamin C, which is essential for the normal function of our immune system. It also contains iron for blood formation, potassium and calcium for bones and teeth and magnesium for muscles.
Lentils salad with wild garlic pesto

Ingredients
- 1 can of lentils, 400g (drained weight 265g)
- 1 handful of spinach leaves
- 1/4 cucumber
- 1 handful of cherry tomatoes
- 1/2 avocado
- 1-2 tablespoon wild garlic pesto
- salt, pepper
- chilli flakes
Note
The recipe can be prepared vegetarian or vegan depending on which pesto variety is used.

Directions
Step 1 | Drain lentils and set aside. Wash spinach leaves and spin-dry. Wash and dry cucumber and cherry tomatoes. Cut cucumber into thin slices. Cut tomatoes in half. |
Step 2 | Peel and pit avocado and cut into small cubes. Put all ingredients in a bowl and mix with wild garlic pesto. Season to taste with chilli flakes, salt and pepper and enjoy! |
