    Lentils salad with wild garlic pesto

    Lentils salad with wild garlic pesto

    Ingredients

    • 1 can of lentils, 400g (drained weight 265g)
    • 1 handful of spinach leaves
    • 1/4 cucumber
    • 1 handful of cherry tomatoes
    • 1/2 avocado
    • 1-2 tablespoon wild garlic pesto
    • salt, pepper
    • chilli flakes

    Note

    The recipe can be prepared vegetarian or vegan depending on which pesto variety is used.

    Directions

    Step 1 Drain lentils and set aside. Wash spinach leaves and spin-dry. Wash and dry cucumber and cherry tomatoes. Cut cucumber into thin slices. Cut tomatoes in half.
    Step 2 Peel and pit avocado and cut into small cubes. Put all ingredients in a bowl and mix with wild garlic pesto. Season to taste with chilli flakes, salt and pepper and enjoy!
