Mmmmmmhhhhhh Apple Pie.
There is nothing better than the crunchy crust and the caramelized apples of a warm, home made Apple Pie.
I just made some mini ones. Served with vanilla ice you can´t beat it.
Apple Pie Crust
(about 6 servings)
1/2 cup salted real butter
Combine flour and sugar in a large bowl. Cut the butter and add to the dry ingredients. Stir in cold water, until the crust mixture forms a ball.
Wrap dough into plastic and let it chill for at least half hour in the refrigerator. Roll dough to a uniform thickness and cut out small circles for the mini tart or mini-muffin pan.
Place one dough circle into pie plate and press into form.
Trim excess dough around the edges.
1/2 cup white sugar
2 tbs lemon juice
1/2 tbs cinnamon
Peel and cut apples into small cubes.
Mix apples with white sugar, lemon juice and cinnamon in a bowl.
Place apple mixture in the pie shells.
