    Wild Garlic Bread Rolls

    Wild garlic Franzbrötchen a normaly sweet recipe in a hearty version!

    Franz loves wild garlic feta rolls and so do I. The season for my beloved witch’s herb is very short.

    Inspired by my dear friend from the far north, I took the trip to transform the usually sweet Franzbrötchen into a tasty, hearty variant with wild garlic and feta.

    Wild Garlic Bread Rolls

    Serves 18

    Ingredients

    • 1 package dry yeast (7g)
    • 150ml milk, lukewarm
    • 75g butter (melted)
    • 450g spelled flour (type 1050)
    • 1/2 teaspoon sugar
    • 1 teaspoon salt
    • 2 eggs (size s)
    • 100g wild garlic
    • 2 gloves of garlic
    • 40ml olive oil
    • 40g cashew nuts
    • 100g feta
    • salt
    • 2 teaspoons sesame seeds, peeled

    Directions

    Step 1 Mix together the dry yeast and milk in a bowl. Add the butter, spelled flour, sugar, salt and eggs. Knead into a smooth dough for 5 minutes. Cover the dough in a warm place and let rise for 45 minutes.
    Step 2 Wash, dry and roughly chop the wild garlic. Peel the garlic. Put the wild garlic, garlic, olive oil, cashew nuts and feta in a blender and puree finely. Season with salt and set aside. Preheat the oven to 190 ° C top and bottom heat and line a baking sheet with baking paper.
    Step 3 Then roll out the dough on a lightly floured work surface to a size of 30x50cm. Spread the wild garlic pesto evenly on the dough and roll up tightly from the long side. Cut the dough into 3cm thick pieces with a sharp knife. Use a wooden spoon handle to press down the middle of the dough pieces.
    Step 4 This is how the typical shape of the Franzbrötchen is created.
    Place the rolls a little apart on the prepared baking sheet, sprinkle with sesame seeds and let rise for another 15 minutes. Bake in a hot oven for 20-25 minutes until golden brown. Then let it cool down on a cake rack and enjoy.
