    SPRING IN THE KITCHEN: WILD LEEK TARTS WITH CHICKPEAS & PUMPKIN SEEDS!

    It’s wild garlic season!

    Wild garlic is an indispensable part of my kitchen. Similar to chives, onions and garlic garlic, the leek plant belongs to the Allium plant genus.

    The nice thing about the delicious herb is its diversity, because leaves, flowers and seeds can be used in pestos, soups, aromatic oils, sauces, salads, casseroles or even fermented recipes.

    Wild garlic tartlets

    Zutaten

    • 60g pumpkin seeds
    • 100g spelled flour
    • 75g butter, cold + something to grease the molds
    • 1/4 teaspoon salt
    • 50g wild garlic
    • 1 egg
    • 300g cream cheese
    • 50ml milk
    • salz, Pfeffer
    • 100g chickpeas, drained (glass)

    Zubereitung

    Schritt 1 Finely grind the pumpkin seeds with a mini chopper or mixer.
    Knead the spelled flour, ground pumpkin seeds, butter and salt to a smooth dough. Wrap in a beeswax cloth or, alternatively, cling film and refrigerate for 30 minutes.
    Schritt 2 Wash, dry and chop the wild garlic. Whisk the egg with the cream cheese and milk. Add wild garlic and season with salt and pepper. Preheat the oven to 200 ° C and grease 4 molds á ø 12cm each with butter.
    Take the dough out of the fridge and divide it into 4 equal portions. Roll out to the size of the molds on a lightly floured work surface. Spread the dough in the molds and prick the base several times with a fork.
    Schritt 3 Chop wild garlic finely. Mix wild garlic, egg, cream cheese and milk together. Season to taste with salt and pepper. Spread the wild garlic cream evenly on the dough and pour the drained chickpeas on top.
    Schritt 4 Bake the tartlets in the hot oven for 30 minutes until golden brown.
    Let cool down after baking. Then carefully remove from the molds and decorate with cress as you wish.
